Paleo pancake mixes can be expensive to buy at the store, so here’s a homemade version that tastes just like the real deal!

Homemade paleo pancakes, where have you been all my life?
If you live in the United States and are a foodie like me, you’ve probably tried MANY pancake mixes before. They’re only all the rage in my foodie community on instagram, Usually you only have to add milk or water, which makes preparation a breeze.
Truth be told though, the mixes can be expensive. But with this homemade paleo pancake mix, it only takes an extra 5 minutes, tops!
And I’m sharing it with all of YOU so you can experience the same joy as I did this morning when I created paleo pancakes that taste just like my favorite mix, but don’t blow up my bank account!
These pancakes require just six simple ingredients:
cassava flour
coconut flour
almond flour
baking soda
egg
unsweetened almond milk
Most people don’t have cassava flour on hand, but it’s very cheap to buy if you know where to look! I got a whole 2-lb bag for only $3.50 from the international store near me!
I also made a protein-packed version of these pancakes, as I always add some sort of plant-based protein powder to my pancakes, whether I’m using a boxed mix or making them from scratch. That way, I feel more satisfied and breakfast keeps me fuller for longer. I recommend a this protein for the best flavor and texture. If you do opt for adding the protein powder, keep in mind that you will also need to add more almond milk to the batter. I have specified how much additional milk you will need in the recipe notes, so you know what to do!

FLUFFY PALEO PANCAKES || gluten-free

Cook Time 5 minutes
Total Time 10 minutes
Ingredients
2 tablespoons (10g) cassava flour/starch
2 tablespoons (14g) coconut flour
1 tablespoon (6g) almond flour
¼ teaspoon baking soda
2 tablespoons (12g) vanilla plant protein*
1 large egg
¼ - ⅓ cup unsweetened almond milk**
coconut oil for pan
Directions
In a medium sized bowl, whisk together the flours, baking soda, and protein powder, if using.
Whisk in the egg and almond milk.
Let batter sit for about 5 minutes to thicken.
Meanwhile, preheat griddle or pan on medium low heat.
Once the batter has sat for five minutes, melt coconut oil on heated surface.
Spoon the batter onto the hot surface and cook for 1-2 minutes on medium low heat, or until edges are golden brown.
Flip, and cook for an additional minute or so.
Transfer to a plate and top with your favorite toppings!
Notes
*this is totally optional. I like to add it to boost the protein, but if you want to stick to the original paleo pancakes like from a mix, omit this.
*you will need 1/4 cup almond milk if not using the protein powder, but 1/3 cup if you are.
