These double layer chocolate fudge bars are rich, creamy, decadent, and oh so fudgy!
Happy WEEKEND everyone! As you can probably tell by the photos, I got a really special recipe to share with you all today.

A couple weeks back, I hosted a giveaway on instagram with BioToday, a company that is all about organic food and healthy living. I was given the assignment to create a recipe using the company’s products of my choice, then give one lucky winner a chance to win those same products to re-create my recipe!
Some of my favorite Bio Today products I have on hand daily, are their nut butters, coconut oil, and maple syrup. I thought about what I could make using those specific products, and finally realized they were all perfect ingredients for some homemade healthy fudge!

I used all Bio Today ingredients for this recipe, besides the vanilla, salt, and chocolate. I just hadto add chocolate, because there’s just something about nut butter paired with chocolate that is so damn good.
And these double layer chocolate fudge bars are just that! I was honestly so glad with the result after making this recipe, it will definitely be one I will be making again and again!

Another thing I will be doing again and again is working together with Anne, the woman behind these GORGEOUS photos!
When I finally had to select a winner for my BioToday giveaway, I came across Anne’s instagram page and was truly blown away by her beautiful photos. Right there and then I knew who the giveaway winner was!
I asked Anne if she could re-create my recipe and photograph it, and I was wonderstruck when I saw what she created–she made some of the most beautiful food photos I have ever seen (not to mention how good she made this fudge look)! Anne was so kind to allow me to use her gorgeous photos on my blog and instagram, so for that, thank you Anne!
It was absolutely amazing to see one of my very own recipes being made my someone else besides myself or my family, and it was even more amazing to have such beautiful photos taken of it! Again, thank you SO much Anne. This recipe is dedicated to you!
DOUBLE LAYER CHOCOLATE FUDGE BARS || vegan, paleo, + gluten-free

Servings makes 12 bars

Chill Time 5 hours
Total Time 5 hours, 30 minutes
Ingredients
For the bottom layer:
300g dark chocolate, in chunks (70-90%, I used 85%)
½ cup (120g) creamy almond butter
¼ cup (60g) coconut oil
½ teaspoon vanilla extract
For the top layer:
½ cup (120g) coconut oil, melted and cooled
1 ½ cups (360g) creamy almond butter
¼ cup (80g) pure maple syrup
2 teaspoons vanilla extract
pinch sea salt
Directions
Make the chocolate layer first. Melt the chocolate, coconut oil and almond butter in a small saucepan over low heat, stirring.
Once creamy, stir in the vanilla, then remove from heat.
Line an 8 x 8 inch baking pan with parchment paper and spread the melted chocolate mixture over the bottom of the pan. Chill in the refrigerator for at least 1 hour, or until completely solid.
To make the almond butter layer, use an electric hand mixer to cream together all the top layer ingredients in a large bowl. You should also be able to whisk the mixture together by hand if you don’t have a hand mixer.
Layer the almond butter mixture on top of the chilled chocolate layer.
Cover the fudge and chill in the refrigerator for 4-6 hours (best overnight) or until firm.
Slice into squares/bars and enjoy!
